Lemon Cherry Bundt Cake...


Had a craving for something sweet, again, tonight. At Starbucks the other day, we saw a Lemon Cherry bundt cake with oatmeal pecan streusel. Fisher thought it looked tasty. Of course I said, "I can bake that!" So, I used my trusty Cinnamon Coffee Cake recipe and changed it to lemon (and no cinnamon). I omitted the oatmeal pecan streusel because oatmeal and lemon just didn't sound good to me! And, I didn't want the topping to burn in our overly hot oven. I tried a new glaze and in my haste to taste the cake (as always), I poured the icing over the cake when it was too warm! The icing melted into and around the cake, but oh well...it still tasted good! The glaze tasted like the marshmallows in Lucky Charms cereal!

I had a piece tonight, and I bit into a cherry pit! Not fun!

on some cans of cherries you can return the pits for a "reward". I've done it and it's pretty lame, but fun to send them back a pit. I think I got a sheet of recipes or something. :)

That's awesome! I guess the pit I found fell off my plate last night because I found it on the floor today. It's white and hard, almost looks like a shapte combination between oatmeal and a nut...maybe it wasn't a pit afterall? No idea what it could be though now! Eew!
