Our friend Davene makes an awesome Kentucky Derby Pie! It is just so so good! I made a version of it at my parents house and it just didn't not turn out like I thought it would. Too chocolately, not a thick enough filling and it didn't get the crust on the top like Davene's. I'm pretty sure her recipe has cornstarch in it, this one did not. She's told me the recipe a couple times, but I haven't been able to write it down. So, here's a picture of it, and I'm going to get the recipe for the good version from Davene.

Kentucky Derby Pie
(from Davene - my mom got the recipe from someone when I was a kid)
1 C. sugar
2 eggs (beaten)
1 stick of butter, melted (1/2 C.)
1 tsp vanilla
½ C. corn starch
1 C. chocolate chips (I combine semi-sweet and dark chocolate chips)
1 C. chopped pecans or walnuts
1 uncooked pie crust
Preheat oven to 350 degrees. Combine first 7 ingredients and pour into the unbaked pie crust. Bake for 45 to 55 minutes (check after 45 minutes). Center of pie should not wiggle when gently shaken. Enjoy!
