St. Patty's Dinner...



St. Patrick's Day called for a themed dinner. I made Pork Chops O'Fisher (originally Pork Chops O'Brien). Hubby doesn't like red or green pepper so I didn't use the O'Brien potatoes. Hubby liked this dish, I didn't care for the cream of celery taste. The potatoes did have a good taste, and I liked the sauce with them. Next time, I may substitute cream of chicken soup, or a condensed cheese soup. I also would like to add more of the French fried onions, afterall we have a giant bag from the wholesale store.

For dessert we had Luck o' the Irish pie for dessert! A creation of my own, inspired by Gator Pie, a book we read in elementary school, and also made a pie similar to this one. I used two small boxes of sugar free/fat free instant pistachio pudding, eight ounces of whipped topping (the Free kind) and a graham cracker crust. I mixed the pudding according to the pudding pie directions, and added the whipped topping, poured in the crust, and voila -- a pie that hubby loved, and asked me not to take to work! I normally take desserts to work to be finished off so we don't eat more than we should.

Wow, that is a green pie! I bet it would be good with chocolate pudding - and not too bad for you either! Maybe I should try that! :)
