We stayed overnight in Amarillo, and had a tasty continental breakfast complete with Texas shaped waffles! What do people in boring shaped states, like Wyoming, do for waffles? LOL
We headed out for New Mexico. We made a stop in the cute town of Roy, NM and had lunch at a great little hole in the wall called Annette's. I had a fried egg sandwich!
We drove the rest of the way to Red River and checked into our hotel. We have a sweet room, right next to the red ski lift! We rented our skis, bought lift tickets and went to dinner at Sundance, a Mexican restaurant. I had a stuffed sopapilla with beef and beans and covered in green chile sauce. It was yummy! We also had sopapillas and honey for dessert!
Now we're relaxing in the hotel room...well deserved after 13 hours in the car!
