The Boy and I are going to need some snacks for an upcoming trip. I thought it would be fun to make granola/trail mix! I searched the web for recipes, and came across this basic recipe. The beauty of the recipe is that you can tailor it to your specific taste. Here's my take:
Jellystone Granola
2 cups Rice Krispies cereal
3 cups oatmeal
roughly 1 1/3 cups sweetened, flaked coconut
roughly 1 2/3 cups pecans
1/4 cup canola oil
3/4 cup honey
Gently combine dry ingredients in a large bowl. Pour in oil and honey. Use your hands to mix until well coated. This mixture is tasty all by itself! Honey is just so delicious. Place granola on foil lined pans. I would suggest that you spray the foil with non-stick spray as my granola stuck as it dried and the pieces directly on the foil would not come off. Bake in 250 degree oven for an hour, stirring every 15 minutes. The granola will still be wet when it comes out of the oven, so it will need to dry for a few minutes. This is where the non-stick spray will come in handy.
Once cooled add the dried fruits of your choice. I added six ounces of cherry flavored Craisins, six ounces of dried, chopped apricots and eight ounces of vanilla yogurt covered raisins.
Wowee! It's delicious and pretty!
What? You don't have granola in your asian jasmine?
Yes, I know the yogurt raisins look like tiny bird eggs in the granola.
