My aunt made an awesome fruit salad with lemon pudding for Easter. I've made it a few times since then for us using instant vanilla pudding, mandarin oranges and pineapples. I add strawberries and bananas if we have them. It tastes really good, and it's pretty good for you. The pudding is sugar free/fat free (about 35 calories per pudding serving) and of course the calories from the canned fruit and juice, which I figure are pretty minimal. We both have a sweet tooth, and this helps satisfy it without eating junk.
Fisher Pudding Fruit
1 20 ounce can pineapple chunks
1 15 ounce can mandarin oranges
1 small package of sugar free/fat free instant pudding (vanilla or lemon)
5 strawberries (optional)
2 medium bananas (optional)
Drain juice from pineapple and mandarin oranges and place in a bowl. Add pudding mix to juices and whisk until slightly thickened. Add pineapple and oranges, stir. Slice and add bananas and strawberries, if desired. Serve chilled. (Bananas will not turn brown as quickly in the pudding, but they eventually will turn).
