OAMC...

Dear Readers. I am a delinquent. I know I owe you all a lot of blog posts from our trip. I will eventually get to them. Promise.

I know I haven't made any cooking posts in a while, so I wanted to talk about OAMC, once a month cooking. It's something I discovered on one of the recipe sites I visit. You basically make stuff to the point of putting in the oven/on the stove top, but you freeze it at that point instead. Then you thaw and cook when you're ready.

Theoretically, you could make a month of meals at a time. I'm not that into yet, but I have made three recipes in two days: Sweet Salsa Dump Chicken, Bacon Wrapped Chicken and Dump Swiss Steak. That's at least six meals for us! The dump recipes are great because everything goes in one bag and into the crockpot or a pan and is baked. Makes it easy, as long as you remember to thaw! And it's great if Hubs beats me home because he can toss it in a pan and get it going before I get home. It also frees us up to go walking or do something healthy while dinner is in the oven!

The other great part is that I only had to buy a few ingredients. I'm also going to make and freeze some black bean soup for the fall weather that will be here soon!
